When I was a little girl, when visiting my Grand and Pop, I would love it when Grand made her chocolate chip muffins because it meant I got to help her bake them. So, before I moved out to CO, I got the recipe from her.
It’s almost the weekend, so mix in the sweet tooth I’ve been having, and you get these muffins. I finally got around to making them, and while it wasn’t as fun making them by myself, they were the perfect mid-week pick me up! Not so great for the clean eating I’ve been attempting to keep up, but hey everything is good in moderation remember?!
This morning I woke up to a blanket of snow outside and huge fluffy flakes still falling from the sky, so breakfast was a warm muffin with a cup of green tea. Still confused as to why it’s snowing right now, but that’s beside the point. Back to the muffins… Recipe below!!
Grand’s Chocolate Chip Muffins
2 cups flour
1/2 cup sugar
3 tbsp baking powder
1/2 tsp salt
3/4 cup chocolate chips
3/4 cup milk
1/3 cup oil
*Becomes a very thick batter – great arm workout if using spoon.
Mix and sprinkle on top before baking:
2 tbsp brown sugar
3 tbsp sugar
Bake at 350 for 10-12 minutes. *Mine took more time to bake, probably around 15-17 minutes but may be my altitude so start small and see how it goes!
