5 Ingredient Banana Pancakes

 

Happy Sunday y’all! I hope your long weekend is treating you SO well!

There’s something about Sunday mornings that just makes me want pancakes. And about 90% of the time, I resist the urge. But today is one of the days in that 10% where I just need pancakes. Neeeeeed them. So here we are. I made pancakes.

But these pancakes are quite a bit lighter than any regular pancakes from a restaurant or a box! Minimal ingredients, and minimal sugar! And the best part – you can add/remove whatever toppings or mix-ins you want! Today I chose mini chocolate chips, because well just because. 🙂 I went out to the beach early this morning with the team of volunteers to track sea turtles! Definitely one of the coolest things I’ve done – and this was the perfect way to fuel up after!

5 Ingredient Banana Pancakes

1 cup oats
1 banana, mashed
1 egg
1/2 teaspoon cinnamon
1 teaspoon vanilla

I also added 1 stevia packet for sweetness (optional) and a tablespoon of mini chocolate chips! You could also add nuts, berries, raisins, etc.!

Mash your banana first. Then add in the remaining ingredients and mix together until combined into a batter. Heat up and grease a skillet or griddle to low to medium heat (I kept it low to keep the outside from getting too crispy). Once it’s hot, add batter and cook like normal pancakes! Top with natural peanut butter or syrup, and enjoy!!

Low-Sugar Chocolate Oat Cookies

Hi guys! Hope your week is off to a fabulous start!

I’ve been spending lots of time with friends and keeping super busy when I’m not! Lots of beach time as well, because, well I think I’m turning into a mermaid.

And now… I have a fun recipe to share with you! It has a pretty funny story behind it.

First of all, I don’t know who to credit for the original recipe for this, because I got it from my Nana, who got it from someone. However, I did tweak it a little bit and make my own version of it because I love doing that!

Last month I went to visit my Nana and Pawpaw. When I go see them, my Nana ALWAYS has some sort of sweet treat made for me. Ever since I can remember, she’s always had fresh cookies, brownies, or some sort of yummy treat waiting because she knows my love for sweets! Well this time, since she knows that I’m trying to maintain a healthy diet and enjoy finding new healthy recipes, she made me some healthy cookies similar to no-bakes (my FAV)!! How thoughtful is that?! Ugh she is the sweetest.

But when she told me about the cookies she made me, she said “Bethany, I made you these cookies because they’re healthier than regular ones and I know you’re eating healthy… but THEY ARE AWFUL!” Hahaha. So of course, when I tried them I loved them, and they were certainly not awful. *Disclaimer: we ended up making real no-bake cookies that weekend because we just needed the real thing too! Balance, right?* I just thought it was so funny that she thought they were so gross. She’s too modest – everything she makes tastes like heaven in your mouth.

That being said, these do not taste quite like no bake cookies. HOWEVER! They are not a bad alternative if you are counting calories or avoiding sugar! I honestly did enjoy them, and will definitely make them again. One of the main changes I made is adding a small amount of NATURAL sugar. When you look at most cookie recipes, there’s a minimum of a whole cup of sugar, so this still keeps them minimal sugar!

I’m not hating on normal cookies, but moderation is key! Sometimes ya just need a healthy alternative, especially with summer right around the corner!

Here is the recipe, including my changes I made:

3 ripe bananas
2 cups oats (I prefer old fashioned over quick)
1/3 cup peanut butter (I use natural!)
1/4 cup cocoa powder
1/3 cup unsweetened applesauce
1 teaspoon vanilla
1 tablespoon honey
*If you still need more sweetness, you can add stevia.

Preheat oven to 350 degrees. Mash the bananas. Stir in the remaining ingredients. Let the batter stand for 20-30 minutes. Drop spoonfuls onto baking sheet, and bake for 10-12 minutes. Enjoy!

Wellness Wednesday: Comparison

Hi pretty people! These super fun yoga pants are from HERE and code “reasoner” saves you some monaaaay! My “Chill” top is from TJ maxx and I’m obsessed. It’s like TJ knew I love to netflix and chill.

I hope your hump day has been fantastic. Mine has been rainy, but productive overall. The nice thing about rainy days is you can stay in and GET. STUFF. DONE. I love checking stuff off a to do list.

I also love naps, like a lot, which is also a huge temptation on days like today. So I’m writing this post instead! It helps me feel more productive 🙂

This morning in the shower, I prayed that God would use me somehow today. Just that. Use me, however. Whatever. I had no specific ideas in mind at that time. But as I was finishing my workout today, I kept thinking about this topic and realized that maybe this is what God wanted me to talk about on here today! (I originally wasn’t going to post today)

If this doesn’t relate to you, I apologize and hope I don’t bore you too much. If it does relate to you, I hope you can find some comfort here on my little corner of the internet!

Something we ALL can relate to is comparison. We are surrounded constantly by people on Instagram with “perfect” bodies (I say that in quotations because we are humans and surprise! not perfect). We are reminded constantly of how hard people are working at the gym, because let’s be honest almost everyone posts their workouts – I am guilty of this too! We scroll through feed after feed full of what everyone else is doing, and we forget that we are only seeing a very small fraction of what’s really going on.

On top of social media, there are always co-workers, family members, friends, etc. who seem to be doing just a little more or better than we are. Or maybe something you wanted job-wise, school-wise, etc. didn’t work out, and it made you feel inferior when comparing yourself to your colleagues.

Am I right? I’m pretty sure I’m not the only one who struggles with this.

But something I have had to basically FORCE myself to do is to take a step back from Instagram or Twitter or whatever platform it is that’s making you feel inferior. Because if it’s giving you anxiety or making you feel less than AMAZING, then is it worth spending time on? No. Take a step back.

I’m not saying delete your insta or anything, Lord knows I love the ‘gram lol. But when you start feeling yourself making comparisons, TAKE A BREAK! Put your phone down, and go enjoy the moment.

And remember, no matter how perfect someone’s instagram feed is, their life is certainly not. Everyone has their struggles, or insecurities, or whatever. Everyone’s body is different. That super intense workout they do might work for them, but maybe you have bad knees and can’t do high impact stuff. THAT’S OKAY! It doesn’t make you LESS, it makes you DIFFERENT. If we were all the same this life would be so boring.

And on top of everyone’s body being different, so is everyone’s situation! Don’t judge your body based on someone thinner than you – what if they have a food intolerance that causes them to be limited on what they can eat, thus resulting in weight loss? What if you didn’t get that internship because a BETTER one is waiting for you down the road? Don’t let what can often be a very positive, happy social media platform turn into something that causes you unneeded anxiety.

Being someone who often struggles with anxiety, this realization has been key for me! Everyone’s on their own path. So let’s build each other up, love each other, and MOST importantly, love OURSELVES. We can’t truly love others until we first love ourselves.

Rainy Day Casual

Hi friends! I have been loving my time here at home the last few weeks – terrifying storms and all. But, let’s be honest… you can only keep a girl away from the beach for so long. I am anxious to get back to my actual home!! Plus, living out of a suitcase can get exhausting. I’d say the biggest struggle for me lately, however, has been change. Plans changing. So many things in my life have just changed at the last minute and left me feeling caught off guard and stressed out and sometimes even angry. I’m a planner, it’s just my personality. While I do love being spontaneous, I also need structure. So, when not just one but many things up and change in my life all at once, no matter how big or small – it causes chaos in my mind (looking at you, Satan).

Lately I’ve learned to just be still and know that God is in control, not me. My job is not to worry, because what does that do? Having faith isn’t always easy, but it’s always worth it. So, wherever you’re at in life, keep your faith even when it’s tough! He’s got your back I promise!

Sorry for the completely non-fashion-related rambling. I felt like someone else might be feeling like me so thought I’d share 🙂

For a good chunk of the time I’ve spent here, it has rained. In fact, immediately after taking these pictures, it poured. April showers this year have been relentless! I wish I had a dollar for every tornado warning we’ve had here lol. These crazy storms ruined some of my most exciting plans here.

Anyways, because of all the rain, the theme of many of my outfits became COMFY+CUTE. And this dress is about as comfy as it gets! I got it back in December, and it’s versatile and can be worn into the spring! I usually break up the stripes by tying a long sleeve around the waist. I went for chambray this time, but plaid is really cute with it too! And being in AR for the week, I figured this hat was pretty appropriate 🙂 I got it HERE and they actually have recently released some new, similar hats that are SO cute (think: one says “Dry Shampoo” omg yas). And my Steve Madden’s on my feet because HOLY COMFY.

And that, my friends, is how you stay comfy yet cute in the rainy weather (without having to try too hard hehe). Hope your week is fantastic!
