Cacao Peanut Butter Energy Balls

You guys… these cacao PB energy balls are the BOMB.COM. Is that still a thing? Bomb.com? Anyways, they’re so good so I’m excited to share the recipe!

I’ve been slacking on creating recipes lately, but finally had some free time this week to play around in the kitchen. This was inspired by my intense stress/PMS chocolate cravings I had lately *nervous laugh* because OMG it’s been bad. I am trying to stay on track but have had several days where I just HAVE to have something sweet. So I decided to try and come up with a new sweet treat that at least has some goods in there for ya too.

Overall, these are pretty clean since the only added sugar is in the mini chocolate chips (or whatever mix-ins you choose) and the applesauce but only because I accidentally got regular instead of unsweetened. Try and go with a natural peanut butter, as it has fewer ingredients than even the low-fat PBs. Honey is also optional, I just added a tiny bit for taste.

Cacao Peanut Butter Energy Balls

1 cup old fashioned oats, blended in processor for about 20 seconds (could also use quick oats)
1/4 cup natural peanut butter
2 tbsp cacao powder (can sub with cocoa powder)
1/3 cup applesauce (preferably unsweetened unless you’re like me and don’t pay attention lol but either works)
1 tbsp natural honey
2 tbsp mini chocolate chips (can use any mix-ins you want! raisins, nuts, etc.)

Mix all the ingredients in a large bowl, until completely combined. Let sit in freezer for 20-30 minutes, then roll into balls. Store in airtight container in the refrigerator. Enjoy!

My Self Care Routine

*dealing with a knee injury, don’t mind the kinesio tape. trendy right?*

If you’ve stopped by my blog any in the past, you probably know I’m a big advocate of self love. I think loving yourself should come first (well…after Jesus, the real mvp) in order for other relationships to flourish in life. The relationship you have with yourself sets the tone for every other relationship you have. 

So, one of the most important ways to keep up the self love supply is to practice self CARE! It sounds so cliche at first, but when you really stop to think about it, it is so important. Especially if you’re on a really busy schedule and don’t have much time to spend on yourself. If you’re not taking care of yourself, how are you going to genuinely be able to take care of your marriage, kids, other relationships, etc.?! It just makes sense to take time, even if it’s a small amount of time, to focus on yourself, your health, and your happiness.

With the hubby being gone for so long, I have had extra time at night and on weekends to spend on myself. Not in a selfish way, but in a self-improvement way. Because if I improve myself, I can ultimately improve my marriage and relationship with him! So everyone wins 🙂

Here are a few things I always make sure to incorporate into my routine as self care.

1. Exercise. This is probably my biggest (and most obvious) form of self care and it has been for as long as I can remember. If I’m stressed, I hit the gym and get my endorphins going and instantly feel better. If I’m angry, I go for a quick workout and blow off steam. If I’m feeling just blah, even a light yoga workout or walk can be a mood booster and simultaneously makes me feel better about my body! Getting plenty of exercise has SO many benefits.

2. Quiet time. This is something I totally dropped the ball on for the past two years, as life got really busy. I stopped taking my quiet time at night or in the morning and just got into the routine of skipping it. Recently, I started forcing myself to sit down for quiet time every morning with my coffee, and it has been life changing. Just like getting OUT of the habit became routine, you can easily get back INTO it if you simply make the time to do it. For me, quiet time is reading my devotional or Bible while sipping my coffee, and spending a few minutes in pray. It sets the tone for my day and gives me a sense of peace, regardless of how much stress I’m under. Find something that you can turn into your quiet time and use it to kick off your day OR wind it down at night!

3. Reading a book…for FUN. This is another one that I got too busy for the last couple years and recently started doing again. I forgot how relaxing it is to read a good thriller for an hour (or more depending on how thrilling it is!) a day! My friend Lauren came to visit me this summer and brought some good books with her. I borrowed one and we read on the beach and on the couch in our free time, and WOW was it nice. It’s such a good temporary escape from reality! I felt so recharged after finishing a book that week, so I’ve started reading more!

4. Eating GOOD food. This means two things to me, and in my opinion it has to be in BALANCE. Self care means taking good care of yourself, so naturally you should be eating foods that are good for your body! Whole foods, REAL food. Not eating junk every day or McDonald’s every day. I traveled a lot this summer, which forced me to eat out much more than I usually do… and it was such a good reminder as to WHY I choose to eat healthy most of the time. I felt SO gross when I was eating out a lot! My stomach hurt constantly and I just felt really sick. The other half of this ‘eating good food’ equation, however, is indulging when you want to! You can’t let the healthy lifestyle become an obsession – you have to find your balance! If you eat healthy during the week but want to have beer and nachos during the football game on the weekend? DO IT. DO IT!!! If you’re PMSing or had a terrible day and need a cupcake and some wine? FREAKING DO IT!

5. Get outside. Being outside, even for just a few minutes a day, can be so beneficial! The body converts sunlight into vitamin D once it hits your skin (just wear sunscreen if you’re out for a while!). Vitamin D helps with the absorption of calcium and promotes bone health. It also helps with muscle function and your immune system fighting off bad guys. Plus, being in the sun just makes you feel amazing! So go on a quick walk on lunch break, hit the beach for some yoga, or simply sit in your yard and read a book. Whatever you choose, you’ll feel great after spending some time outdoors! Again, instant mood booster.

6. Listen to your body and know when to slow down. This is so important. At my last job, it was SO high stress and high activity, that it was literally taking a toll on my physical health. I knew it would be a mentally stressful job, but it began causing my migraines to become SO much more frequent than they already were, I wasn’t getting enough sleep, and my foot that had surgery had begun to really bother again. Sometimes, you have to listen to the signs you’re body is giving you to take a step back and slow down. My husband reminded me that quality of life is more important than making a certain amount of money! It’s so true – it’s not worth putting your health at risk. Sometimes it’s okay to slow down and binge watch a season of Friends instead of going going going every single day!

That’s the run down on my self care techniques! I know there are lots of other ways to practice self care, but I don’t want to talk your ear off any more than I have 😉 Maybe I’ll do another self care post soon! Leave me a comment telling me your favorite self care practices!

How I Styled My Latest Thrift Shop Find

Would you believe me if I told you I got this adorable gray dress for $1.50 at the thrift shop? Because I did (Along with a couple other hidden gems). Total day maker, because I love finding good deals. I just love how it can be simple/casual OR dressy/classy! The only thing is, I can’t link where the dress is actually from… because I have no idea. But that’s okay just this once, because the main focus of this post is my necklace *😍😍* from Julia Marie!

September is upon us (how in the heck did that happen?! it was July like five minutes ago) and I’m so excited that it is. First of all, it means I’m one month closer to my hubby coming home — I haven’t seen him in five months so ANTSY is an understatement! It is also our wedding anniversary month ONE week from TODAY! This is one of my favorite holidays to celebrate! Unfortunately, this year we’ll be celebrating without each other, but that just means we’ll celebrate twice as much when he comes home later on 🙂 For now, I’ll probably go buy myself more flowers like the ones in these photos; I’ll just add some wine and chocolate in there. #treatyoself

Anyways, September 19th, 2015 is my favorite day since it’s the date of our amazing wedding! It was such a fun day and I wish I could do it again, and again and again. It was so perfect! But, since I can’t relive my wedding I guess I will just wear my wedding date necklace instead 😉

I was scrolling the Julia Marie website one night, torn on what to order because of how beautiful every single piece is… but I knew I wanted something kind of simple yet elegant if I wanted to dress it up. When I saw this bar roman numeral necklace, I knew right away that I HAD to have it, with my wedding date on it. I’m so in love with this necklace and have already worn it with pretty much everything. It works well as a single necklace with a nice dress or top, but also layers really well with other, longer necklaces for a more trendy/edgy look! I shot this look while traveling in AR, so don’t mind the humidity hair :/ is it fall yet?! It was in the 60s this morning but it’s already warming up since the sun’s out. I guess we’re officially entering the awkward time of year where you need jackets in the morning but burn up by the end of the day!

Side note — lots of prayers going out to everyone affected by hurricane Irma (and Harvey too). My house will probably be fine, but I know many people’s aren’t and I hope they know how prayers are being lifted up for them during this difficult time.

Red Marble Pants

One of my favorite trends lately is the marble trend. The marble print is going on everything and I’m really not mad about it! I bought my first pair of marble print pants from Firepower back around last Christmas, and I was so in love with the print AND the fit that I couldn’t wait to get more.

No Doesn’t Always Mean No

Something that I have really been awakened to lately is the timing of life. I always heard and believed that, “Everything happens when it’s supposed to happen.” It’s one of those things people tell you when they want to help you feel better but don’t know quite what to say, right?

Well, kind of. But it’s also strangely accurate, as simple as it sounds.

Timing really is everything, and sometimes that’s a tough pill to swallow because it rarely makes sense at first. As humans, we try to resist change and/or anything that doesn’t seem 110% “right” to us. We will kick and scream until we get our way, essentially; whether that means fighting for what we believe in or being blind to reality and missing the mark on where we’re supposed to be.

Sometimes the my-way-or-the-highway attitude can get us really far in certain situations, and can be a great quality to possess. But other times, it can mean being totally blind to WHY we should perhaps wait silently until the right opportunity comes along.

Sometimes, what you think is so right for you can turn out to be so wrong, so God will close that door in order to lead you to the correct one. However, when that first door is shut, we tend to shut down and get angry. We take it as a huge negative, or a major setback. We don’t realize that He’s saying, “Hold on just a little longer, I’ve got something even better for you if you’ll just take a chill pill for a hot sec.” And then, in the end, whatever He told us a big fat NO to ends up being a blessing in disguise because of the new door that opens and puts our butt right where we’re meant to be. Funny how that works, right?!

So, whether you’re struggling with people saying no at work, in your personal relationships, in your financial situation, etc… try to see those NO’s in a new light and look for the positive that can come from it! If God’s closing a door, He’s probably getting ready to open a new one, whether it’s what was in YOUR original plan or not. “No” doesn’t always mean NO, it often means “Not right now.”

Not only is timing everything, but so is perspective. Look for the good and the good will find you 🙂

Blueberry Cacao Smoothie

It is HOT out there, so I have the perfect, refreshing smoothie for you!

I came in from walking the beach today dripping sweat, and all I wanted was a cold drink but I also needed some fuel. So I made a smoothie and it was heavenly.

I’ve been on a major smoothie kick lately, probably because it feels like it’s 10000 degrees in FL right now. Fall where you at?! But I’ve been trying to change up my smoothie game a bit so this one was definitely a winner. I used to only do PB banana protein smoothies everyday, but I needed something more berry-y, ya feel?

Here it is:

1/2 cup frozen blueberries
1/4 cup frozen strawberries (optional – they add a little flavor)
1 tbsp cacao powder
1 scoop chocolate protein powder
1/2 tbsp natural peanut butter (or nut butter of choice)
1/2 cup almond milk (or milk of choice; more or less depending how thick you prefer)
1 stevia packet

Blend until smooth and amazing. Enjoy!

Full of protein, antioxidants, and all kinds of goods. 🙂 Also good topped with granola, coconut flakes, or chia seeds!

Wellness Wednesday

HIII happy hump day! Halfway to Friday people.

So lets talk about my favorite yoga pants. These blue and gray ones from Firepower are seriously the shiz. They feel so amazing on! The material is comfy and high quality. They are a little more expensive than what I normally buy BUT hear me when I say SO. WORTH. IT. They’re still cheaper than Lulu though but still the same quality (hello, score). I have mentioned recently that I’m struggling with a knee injury that has set me back in my workouts (hashtag anxiety). Fortunately it’s looking like I won’t need surgery (thank God!) but they still don’t know why it’s still hurting. So frustrating! But anyways, at first I used my knee as an excuse to skip my workouts completely. Yes I was in a lot of pain so that’s understandable… to an extent. But now I have realized that instead of letting it defeat me, I can use this time as a chance to focus on what I CAN do instead of what I can’t.

For example: one of my biggest fitness goals right now is to do a pull-up on my own. So instead of being sad I can’t work legs on leg day (my fav workout) I can focus that energy on improving my upper body strength. My knee may be weak but my arms are perfectly fine. Might as well go hard with them! If you have something that you feel is holding you back from your goals, let it motivate you instead!

While rest days are extremely important, don’t use the little things as an excuse. Get out there and kick that excuses butt. Tired from work? Even just a 30 minute walk can boost your mood and energy. Too hot outside? Go for a swim – then you’re cooling off AND getting cardio in. Whatever it is, just do it.

And get some Firepower so you’ll look badass doing it 😉

My Review of “What the Health”

*actual picture of the eggs I ate last night ^

I’m sure you’ve heard by now all the rave about the latest documentary on Netflix called “What the Health.” I certainly have, and was shocked at the response and number of people claiming they needed to instantly change their whole diet based solely on this documentary. So I immediately decided I needed to watch it and form my own opinions on it.

If you haven’t heard about it or seen it yet, this documentary looks at the link between our diets (mostly meat and dairy) and major diseases they can potentially cause. It is clearly produced by people pushing the vegan agenda, and it also completely discredits several major health organizations (like the American Cancer Society, American Heart Association, etc.).

I will start by saying this: I do acknowledge and appreciate that the health of our nation is being discussed. We are certainly experiencing an obesity epidemic in this country, and it should be brought to light how to prevent it further. The majority of people need to start understanding how the type/amount of foods they are consuming is affecting their overall health. However, the way this film goes about it is not so much informative as it is simply one giant scare tactic with little valid research to back it.

One of the biggest red flags to me was that, throughout the whole 1.5-hour-long film, they interviewed only TWO Registered Dietitians, and one of those two only spoke for about a whole 20 seconds. The rest were mostly doctors who simply stated their opinions without backing it with hard scientific evidence. AND, at the end of the film, several of the doctors even admitted that doctors hardly get ANY nutritional education and know little about how diet affects the body… so then why are we taking everything they are pushing on us without questioning their research or validity?!

Here are my main points I wrote down while watching it that I want to share:

YES processed meat is not the type of meat you should be consuming for the majority of your meat choices… NO meat will not give you cancer, as long as you are choosing the right kinds! (Lean meats that are organically raised/fed are best, but this is not always realistic. It isn’t the meat that’s harmful, but the chemicals/antibiotics that are sometimes put in them.) I personally am not the biggest fan of meat but only because it’s a preference thing – I do still try to eat a serving of lean meat at least a few times a week.

YES a vegan/plant-based diet CAN work for people! Don’t get me wrong, I find nothing wrong with a plant-only diet, if you have your reasons for doing so. You can still get all the macro- and micronutrients needed from plants if you follow it correctly. But if you choose to do so because this video scared you into thinking meat of any kind at all is going to kill you? NOT a good reason. You do not have to rely on a plant-based diet to avoid disease. People on a plant-based diet can still get sick, just like people on animal-based diets can. Every body is different and handles food in its own way.

NO sugar alone does not cause diabetes… the main contributors to diabetes are genetics, lack of physical activity, and high energy (calorie) intake. So yes, a diet full of sugar is often associated with a high energy diet. Don’t let the wording of that whole diabetes conversation confuse you. And no, eating plants will probably not reverse your diabetes in a week or two like they imply. Food can certainly be the best medication in many circumstances, but it’s very complex and disease-dependent.

NO eating one egg a day is NOT equivalent to smoking five cigarettes a day!!! This one really pissed me off, to be honest. If eggs were as bad as smoking five cigarettes a day, I’d probably be dead or have cancer by now. It is also not equivalent to a whole egg McMuffin.

YES eggs have cholesterol in their yolks! NO it is not going to kill you as long as you’re eating them moderately, and yolks also have nutrients not found in the whites of the egg.

YES diets high in red meat (*note I said HIGH in red meat, not just eating a serving. A small amount in the diet won’t hurt you*) can be a risk factor for cancer… BUT this film claims that even lean chicken can cause cancer! Um, last time I checked chicken isn’t red meat so bye.

YES you can consume dairy and NOT DIE!!!! Let’s think about this… if dairy is terrible for us, then WHY IS IT A WHOLE FOOD GROUP?! Yes you should choose low/non fat options and yes you should not eat it in excess… but to go to the extent of saying that even babies don’t need milk? A bit excessive if you ask me. And if you’re reading this then I assume you pretty much asked me, so you can’t get mad at my somewhat sassy opinions. 🙂

YES you should try to avoid constant medications IF possible, but some people simply need them based on their conditions. So yes, the pharma industry is huge and all about the money, but some people can’t simply be healed by eating plants. If it were that easy then this would all be a different story.

YES some of the sponsors of these organizations do happen to have a conflict of interest, and I do find that odd and slightly off-putting. But at least the organization is there and is making the effort to do something about the issue. Before completely discrediting them, you should make sure your research is accurate.

Overall, I would not recommend this documentary to someone because it is so one-sided and misinformed that it is completely misleading people. My advice? Find what works for YOUR body, based on YOUR specific needs, and focus on a balanced, varied diet consisting of REAL whole foods, while also making healthy lifestyle choices. If you want to lose weight and trim fat? Energy in must be less than energy out… AKA eat less and/or workout more. Adequate amounts of protein, fat, and carbohydrate are key. Don’t buy into everything you hear, unless you know they are a valid resource back by scientific evidence.

Like the Ocean

Happy Sunday 🙂

Today in church, we were singing a song that said “from skies to oceans deep, Your love goes on.” I have heard this song numerous times, since it’s one of the ones they sing on most Sundays. But this time, as soon as I heard that line, something stuck with me.

Oceans deep.

I instantly had so many thoughts running through my head. I thought of the photo of the ocean I took a few weeks ago when I was at the beach (it’s the one I posted above and is also the background screen on my phone). I thought of the big, beautiful, scary ocean that I’ve come to love so much, that consumes my photo library, my hobbies and free time, and that helps create a majority of the memories I’ve made here.

Even through the rest of the message in church (which was GOOD don’t get me wrong), I couldn’t stop making all of these ocean parallels in my head. So I’m sharing them with you because who knows maybe that’s why He put em in my head 🙂

Sometimes, life is like the ocean. It is beautiful yet terrifying. It can be amazing and awe-inspiring. It can also be rough, and can throw you around and make you feel like you’re drowning. And other times you feel like you’re floating peacefully on a nice vacation. You can’t see what’s out there most of the time. Sometimes, like at the ocean, you’ll be surrounded by people – family and friends and new relationships. Other times, you’ll be so alone and isolated you wonder if anyone is even there. The waves of life will knock you down repeatedly, but once you get back up, you’ll see nothing but beauty.

But, regardless of whatever point you’re at in the ocean of life, God’s love is there. And that is how God’s LOVE is also like the ocean…

No matter how rough the waves get, the water is still there at the end of the day, right? Well so is His love. No matter how rough life gets, no matter what waves Satan throws your way, God’s love is there at the end of the day. You may not be able to see the whole plan right now, but that doesn’t mean He’s not there.

So keep going.

Keep trying.

Keep swimming.

Keep praying.

Keep fighting. For whatever it is that you’re fighting the waves for.

KEEP GOING. Because He’s not going anywhere, and He’s got a beautiful, ocean sunrise waiting for you.

I’ll give you a glimpse into my own waves I’ve been fighting, and it’s kind of crazy how literal and metaphorical this is all at the same time. As some of you may know, I’m dealing with a knee injury from a couple months back. It hasn’t improved and I’m currently waiting on MRI results to see what the next step is (prayers for no surgery plz cause ain’t got time for that ish). I have been very frustrated throughout the last couple months ever since it happened, and I was so angry that God let it happen to me because I had JUST gotten to where I wanted to be physically – I was working out harder than ever and learning to love my body. And then an injury. One that keeps me from doing my favorite things like biking, running, even walking.

Anyways, guess how I injured my knee? IN THE FREAKING OCEAN. LOL RIGHT?? I was swimming against the current one day, and as soon as I planted my feet, a huge wave hit me from the side and twisted my knee so hard I could instantly feel that something was wrong.

I won’t go into any more detail because it’s irrelevant, but wow is God teaching me a lesson. An example that the waves of life can LITERALLY knock you down and throw off your own plans. But to get through it you have to remember that His plan is better even though you can’t see it right now!

My Pet Peeve in the Health World

Hi! I know I kind of vented / voiced my opinions in my previous post, butttt… I’m about to do that again!

**Like I said before, I only go on rants if I actually feel they’re valid rants 😉

Let’s talk about my BIGGEST pet peeve in the health world.

The health world has become a world everyone and their mom wants to be a part of – which is fabulous! I love that so many people are hopping on the healthy train (or “healthy” train, if you know what I mean)! Obesity is getting out of control in our country, so it makes my nutrition-loving heart HAPPY to see so many people/restaurants/companies trying to watch calories/ingredients and whatnot.

BUT… (here comes the but).

NOT EVERYONE IS A TRUE NUTRITION PROFESSIONAL! I repeat – not EVERYONE is a nutrition professional!!!! So WHY are you listening to anyone and everyone on the internet?!

Here’s the deal. Anyone can go on the internet, find some ish on nutrition, do a little research, and BAM they can become a self-proclaimed “nutritionist.” ANYONE can do this! They could have NO idea what the difference is between a carbohydrate and an amino acid, and still try and tell you what/how to eat! To me, that is terrifying.

On the other hand, you have people (like yours truly) who spent four YEARS of intense studying, hard work, and hard @$$ chem tests to earn a degree in nutrition and actually know exactly what they’re talking about! Especially those people who go on to earn their RD (registered dietitian) after their degree. We didn’t go through all of those brutal chem labs and case studies for nothing, y’all.

So how do you know who to trust with your nutrition information?! Check their credentials FIRST thing. You should primarily listen to those who have their RD, this means they have done their internship and passed their RD test, and have extensive knowledge in food and nutrition, and are great if you’re seeking nutrition counseling! At the very least, find someone who has a degree in the area. And if they’re not an RD, check to see what other nutrition background they may have!

While I think it’s amazing how many bloggers out there are eating healthy and getting into great shape, many are not qualified in nutrition counseling. I get so frustrated when I see unqualified people trying to push THEIR diet plans (not recipes – but actual diet plans) on people who it may not work for or be good for! I am not bashing anyone for promoting their healthy lifestyle – some of these people DO have the qualifications! But before incorporating it into your own life, check their credentials and whether it would be a good HEALTHY fit for your body. Everyone’s body is different – and chances are your BMR is different, your activity level is different, your intolerances are different, than that of the random website you’re reading. Check your facts people! One of my all time favorite bloggers, Rachlmansfield.com, is a wonderful example of all this, because every time she promotes a healthy product or way of eating, she clearly states that she is a food blogger not a dietitian and that what she’s promoting is simply what’s good for her. And I love that!! Go Rachel! (She will probably never see this but I’m a huge fan- go check her out for amazing recipes).

I feel like I say this a lot but I really REALLY don’t mean to sound preachy – just feel like I’d be failing as a member of the dietetics world if I didn’t warn you guys, my dear followers, of this because I have seen it SO much lately!

Pictured is Pesto Chicken Zoodles – one of my fav dinners lately. Recipe below!

I made this for 1 since it’s just me right now, so you can adjust the recipe for however many people you’re prepping for.

1 boneless skinless chicken breast
1 whole zucchini, spiralized
1/4 cup pesto

Bake chicken or cook in crockpot. I cooked mine in the crockpot with a little bit of pesto, pepper, and garlic powder (low for 6-8 hours or high for 3-4 hours, depending how much chicken). After zucchini is spiralized, transfer to skillet and sautee with the remaining pesto, about 3 – 4 minutes. Serve chicken over the zucchini noodles, and add a bit of extra pesto if needed. Parmesan would be great as a topping! Enjoy!
