Blueberry Cacao Smoothie

It is HOT out there, so I have the perfect, refreshing smoothie for you!

I came in from walking the beach today dripping sweat, and all I wanted was a cold drink but I also needed some fuel. So I made a smoothie and it was heavenly.

I’ve been on a major smoothie kick lately, probably because it feels like it’s 10000 degrees in FL right now. Fall where you at?! But I’ve been trying to change up my smoothie game a bit so this one was definitely a winner. I used to only do PB banana protein smoothies everyday, but I needed something more berry-y, ya feel?

Here it is:

1/2 cup frozen blueberries
1/4 cup frozen strawberries (optional – they add a little flavor)
1 tbsp cacao powder
1 scoop chocolate protein powder
1/2 tbsp natural peanut butter (or nut butter of choice)
1/2 cup almond milk (or milk of choice; more or less depending how thick you prefer)
1 stevia packet

Blend until smooth and amazing. Enjoy!

Full of protein, antioxidants, and all kinds of goods. 🙂 Also good topped with granola, coconut flakes, or chia seeds!

Hi guys. Happy hump day! Hope your Wednesday is going well. Mine hasn’t been the ideal day – I’ve been sick this week and today woke up feeling 1000x worse. It seems the only time I have time to blog lately is when I’m stuck at home sick. When you work with roughly 75 kids a day, your immune system takes a few hits. I think this is the third time I’ve been sick in a month or so… Ain’t NOBODY got time for that. The hubby is taking me to see my favorite band play tomorrow night and I can’t be feeling lousy for that!

ANYWAYS! This cold I have is what inspired this smoothie recipe for my afternoon snack today. I don’t call it super smoothie because it has lots of magical super foods in it (is there even such a thing?), I just think it sounds cool and I really want it to have some sort of power over my cold. I also ate a Larabar since I recently got my appetite back, and what better way to heal your body than to fuel it?!

It’s cold/flu season, so I thought you guys might enjoy this smoothie as well! It’s got lots of strawberries, blueberries, and blackberries in it, which are high in anti-oxidants. The spinach also contains lutein, which is also an anti-oxidant. (In case you’re wondering what antioxidants do for ya, they help protect your healthy cells from damage by free radicals!). Spinach is a great source of vitamin A, and even has some vitamin C in it to help out your immune system.

I’m also here today to remind you of something very simple yet very impactful.

It’s just three words, but when I read them somewhere this morning, it felt like God just instantly wrapped me up in a big bear hug.

Are you ready?

You are enough. YOU are enough. You are ENOUGH.

No matter what the world tries to tell you, this is true. You are enough in the eyes of the Lord, so why worry what the eyes of the world think? Whether you are a student trying to keep up with studying and your GPA, or a mom trying to juggle your kids and your marriage and your sanity, or a wife trying to balance your work life with your wifey life, or someone who’s somewhere in between there… You are enough and you are loved!

I struggled for a long time before realizing that I am enough, but now that I’m confident in that, life seems to be a little easier. Just thought I’d share. 🙂 Hope you guys have a great rest of your week!

Power Smoothie

1-2 generous handfuls of baby spinach (I promise you can’t taste it)
1 cup of frozen berries (mixture of blueberries, blackberries, strawberries, raspberries)
1 tbsp natural peanut butter or PB2
1/3 cup skim/nonfat milk (use what you prefer)
2 tsp chia seeds
1 packet stevia, if needed

Blend until smooth and enjoy!

 

The Smoothie of the Summer

Have you ever found a new food you love, and you suddenly can’t get enough of it? Well, that’s this smoothie for me. So good I gotta share with y’all. I’m not gonna lie, even though I was SO pumped to get my new blender (a few months ago), when it came down to it, I rarely make smoothies because I get lazy. But THIS smoothie… this smoothie is worth it. And it doesn’t even take that long to make! (most smoothies don’t… I don’t really know why I get lazy when it comes to this lol). It’s only a few ingredients, and they’re things you typically have lying around the kitchen anyway. So there, you have no excuse not to try it!

Back in college, my froomie bestie Haley and I lived about 2 minutes from Sonic (AND chick fila. Still wondering how I didn’t gain a million pounds in college). During the summer when they had half price milkshakes, we would make up any excuse possible to go get one. Like, every night. [bear with me, this story is relevant]. My favorite milkshake from there – and trust me I tried almost all – was the chocolate PB banana. Holy yum.

THAT’S WHAT THIS SMOOTHIE TASTES LIKE. And it’s like 1/25th of the calories!! Holla holla. I mean the texture, consistency, and taste are all perfect. That is all.

1 frozen banana
1 cup milk (I use fat free/skim and it tastes fine; use what you like)
1 tablespoon natural peanut butter
2-3 teaspoons cocoa powder
honey or stevia to taste (I use 1 stevia packet + 1 squirt of honey!)

Blend until it reaches the right consistency (usually 30-ish seconds); enjoy!
